1. Dark Chocolate Olive Oil Brownies

Uses: Bllod Orange EVOO

Ingredients

  • ½ cup EVOO

  • Âľ cup sugar

  • 2 eggs

  • 3/4 cup cocoa powder

  • ½ cup flour

  • ÂĽ tsp salt

  • ½ tsp baking powder

  • 1 tsp vanilla

Instructions

  1. Preheat oven to 350°F.

  2. Whisk oil, sugar, eggs, and vanilla.

  3. Stir in cocoa, flour, and salt.

  4. Pour into greased pan and bake 20–25 minutes.

✨ Olive oil makes brownies incredibly moist.

2. Whipped Mascarpone with Strawberries

Uses: Strawberry or Fig Balsamic

Ingredients

  • 1 cup whipping cream

  • 4 Tbsp granulated sugar, divided

  • 1 cup mascarpone cheese

  • 1 cup strawberries, raspberries, blackberries, cherries, blueberries, or whatever is in season

  • 4 Tbsp Balsamic

Instructions

  1. In a cold bowl whip cream, when the cream is almost stiff whip in 3 Tbsp of sugar. When the cream is stiff, fold in mascarpone and place in fridge for 15 min.

  2. Place berries in a bowl, drizzle with balsamic, and then sprinkle remaining 1 Tbsp of sugar. Stir the fruit to ensure everything is well coated and allow to sit for 5-10 min.

  3. Take the whipped cream out of the fridge and gently fold in balsamic macerated berries to create a swirl effect before serving.

3. Lemon Olive Oil Cake

Uses: Meyer Lemon Olive Oil

Ingredients

  • 1½ cups flour

  • Âľ cup sugar

  • ½ cup lemon olive oil

  • 2 eggs

  • ½ cup milk

  • 1 tsp baking powder

  • zest of one lemon

Instructions

  1. Preheat oven to 350°F.

  2. Mix wet ingredients, then fold in dry.

  3. Bake 35 minutes until golden.
